Crunchy Edamame Salad

ingredients

  • 1/4 dl quinoa
  • 3/4 clove garlic
  • 1/2 tbsp peanut butter
  • 1/4 tsp ginger
  • 1/2 tbsp white wine vinegar
  • 1/4 tbsp soy sauce
  • 1/4 tbsp maple syrup
  • 1/8 tsp chili flakes
  • 1/2 tbsp water
  • 1/4 dl peanuts
  • 1 1/8 dl red cabbage
  • 1 1/8 dl spinach
  • 1/2 dl carrots
  • 1/4 x jalapeño
  • 1/4 x lime
  • 1 1/8 dl fresh coriander
  • 1 1/2 dl edamame

method

  1. Cook quinoa according to package instructions. Set aside to cool.
  2. Prepare the dressing by mixing all the ingredients in a small bowl.
  3. Roast your peanuts in a skillet for a few minutes.
  4. Chop up all the ingredients for the salad, and assemble. Enjoy!
