
ingredients
- 1/4 dl quinoa
- 3/4 clove garlic
- 1/2 tbsp peanut butter
- 1/4 tsp ginger
- 1/2 tbsp white wine vinegar
- 1/4 tbsp soy sauce
- 1/4 tbsp maple syrup
- 1/8 tsp chili flakes
- 1/2 tbsp water
- 1/4 dl peanuts
- 1 1/8 dl red cabbage
- 1 1/8 dl spinach
- 1/2 dl carrots
- 1/4 x jalapeño
- 1/4 x lime
- 1 1/8 dl fresh coriander
- 1 1/2 dl edamame
method
- Cook quinoa according to package instructions. Set aside to cool.
- Prepare the dressing by mixing all the ingredients in a small bowl.
- Roast your peanuts in a skillet for a few minutes.
- Chop up all the ingredients for the salad, and assemble. Enjoy!
