Creamy Vegetable Pasta

ingredients

  • 3 x tomato
  • 2 x red pepper
  • 1/2 x yellow onion
  • 2 x carrots
  • 3 dl white beans
  • 1 tsp ginger
  • 1/2 tsp chili flakes
  • 2 clove garlic
  • 1 tbsp olive oil
  • 100 g pasta penne
  • 1 1/2 dl cream
  • 3 handful spinach

method

  1. Chop tomatoes, red peppers, onion and carrots.
  2. Brush with oil and bake in the oven at 220 degrees in a refractory dish until they become tender.
  3. Rinse the beans in water and fry them with olive oil in a pan with ginger, chili and garlic.
  4. Boil pasta.
  5. Take out the vegetables, remove the skin and mix it in a blender until you get a smooth texture.
  6. Blend it all together and stir in spinach.
