Creamy Avocado Pasta

ingredients

  • 2 dl chickpeas
  • 1 pinch cumin
  • 1 handful cherry tomatoes
  • 1/2 x red onion
  • 60 g pasta penne
  • 1/2 x avocado
  • 1 tbsp feta cheese
  • 1 clove garlic
  • 2 pinch salt
  • 2 pinch black pepper
  • 2 handful rocket
  • 1 handful walnuts

method

  1. Preheat the oven at 220 degrees celsius.
  2. Rinse the chickpeas in cold water, spread them out on a baking tray with salt, pepper and cumin. Bake for about 20 minutes.
  3. Chop up cherry tomatoes and red onion while you're cooking the pasta.
  4. Mash the avocado together with feta cheese, garlic, salt and pepper.
  5. Mix everything together in a bowl and top with roasted walnuts.
