Couscous Salad with Grilled Halloumi

ingredients

  • 1 dl couscous
  • 1 tbsp olive oil
  • 1/4 tsp turmeric
  • 1/2 tsp cumin
  • 1/4 pack parsley
  • 100 g halloumi cheese
  • 1/4 x cucumber
  • 1/2 x red onion
  • 1/3 pack cherry tomatoes
  • 1/4 pack spinach
  • 1/2 pack chickpeas
  • 100 g feta cheese

method

  1. Make couscous according to the instructions on the package. When the couscous is done, add the olive oil, turmeric, cumin and finely chopped parsley. Season with a little salt.
  2. Fry halloumi in a frying pan with a little olive oil.
  3. Slice cucumber, cherry tomatoes and red onion.
  4. Add cucumber, cherry tomatoes, red onion, spinach and chickpeas to the couscous. Top with feta cheese and halloumi.
