Cottage Cheese Sandwich
Cottage cheese is one of my favorites and I am very happy that my children are also starting to like it. This dish has been with me for many years, and in the picture I used a focaccia bread I had on the counter at home. You can use any bread or roll for this dish. Ciabatta also tastes absolutely delicious. Use the opportunity to eat any bread you have at home.

ingredients

  • 3 x slice of bread
  • 100 g cottage cheese
  • 1/2 x red pepper
  • 1/2 x organic lemon
  • 1/2 x red onion
  • 1/2 x Chinese cabbage
  • 1 handful fresh coriander

method

  1. Find bread. If you wish, you can toast it to a pan with olive oil and garlic to give it a little more flavor.
  2. Add the cottage cheese to a bowl. Rinse and cut the peppers into pieces. Peel red onion and cut into pieces. Add this to the bowl and stir. Add squeezed lemon and season with a little pepper. Combine everything.
  3. Assemble slices of bread and cottage cheese for a sandwich in layers as in the picture. Make a quick salad with Chinese cabbage and coriander. If you have any dressing, you can add this to the salad if you like.
