• 150 g corn
  • 1 clove garlic
  • 1/4 x red onion
  • 2 tbsp fresh coriander
  • 1 x eggs
  • 1 dl plain white flour
  • 1/2 tsp red pepper spice
  • 1/4 tsp chili spice
  • 1/2 tsp salt
  • 1/2 tsp baking powder
  • 1 tbsp butter


  1. This recipe is perfect if you've opened a can of corn and you need to use it up before it goes bad.
  2. Cut the garlic, the red onion and the coriander.
  3. Whisk the egg in a bowl and fold in the flour. Add paprika, chili powder, salt and baking powder.
  4. Add the corn, garlic, red onion and coriander to the batter.
  5. Melt the butter in a pan, and fry the batter in small pancake-shapes on both sides, until they turn golden brown.
  6. Serve the corn fritters as is, or over a salad or with a dip on the side. It's up to you.
