Ingredients: 70 g fresh coriander; 50 g peanuts; 1 tsp chili flakes; 0.5 x lime; 1 pinch black pepper; 2 clove garlic; 2 dl extra virgin olive oil; 1 pinch sea salt

This pesto is full of flavor, and goes perfectly with pasta, grilled shrimps, or in salads.

70 gfresh coriander

50 gpeanuts

1 tspchili flakes

0.5 xlime

1 pinchblack pepper

2 clovegarlic

2 dlextra virgin olive oil

1 pinchsea salt

How to Make

Put all of the ingredients, apart from the oil and salt, in a food processor and roughly chop together. With the motor running, add the oil to give a smooth pesto. Season to taste with salt.
