
This pesto is full of flavor, and goes perfectly with pasta, grilled shrimps, or in salads.
Ingredients
- 70 g fresh coriander
- 50 g peanuts
- 1 tsp chili flakes
- ½ x lime
- 1 pinch black pepper
- 2 clove garlic
- 2 dl extra virgin olive oil
- 1 pinch sea salt
Method
- Put all of the ingredients, apart from the oil and salt, in a food processor and roughly chop together. With the motor running, add the oil to give a smooth pesto. Season to taste with salt.
