Cookie Dough Cupcakes


  • 2 x eggs
  • 2 tbsp peanut butter
  • 3 dl chickpeas
  • 4 tbsp agave sirup
  • 4 tbsp oat flour
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 1 pinch salt
  • 50 g dark chocolate
  • 1 pack cream cheese
  • 3 tbsp powdered sugar
  • 3 tbsp raw cacao


  1. Preheat the oven at 190 degrees celsius.
  2. Rinse the chickpeas in cold water and use a hand blender to mix the chickpeas with egg, peanut butter and maple syrup into a batter.
  3. Stir in the dry ingredients and add the chopped chocolate.
  4. Pour the batter into muffin tins, and bake in the oven for about twenty minutes or until you get a golden brown colour.
  5. Mix together the cream cheese, icing sugar and cocoa powder to make a glaze and put on the muffins when they have cooled.
