Chickpea Stew

ingredients

  • 60 g brown rice
  • 1/4 x yellow onion
  • 1/4 tbsp olive oil
  • 140 g chickpeas
  • 1/4 tbsp red pepper spice
  • 1/2 tbsp curry spice
  • 1/4 tbsp turmeric
  • 100 g coconut milk
  • 1 1/4 dl water
  • 40 g spinach
  • 1/2 dl fresh coriander

method

  1. Cook rice according to package instructions.
  2. Finley chop up onion. Fry onion and chickpeas in some olive oil for a few minutes.
  3. Add all the spices and cook for another two minutes.
  4. Now add the coconut milk and water. Let simmer for a few minutes before adding the spinach.
  5. Add spinach and stir. Add salt and pepper to taste.
  6. Serve with rice and fresh cilantro.
