Ingredients
- 200 g chickpeas
- Β½ x red onion
- 2 x spring onion
- ΒΌ x lemon
- 4 tbsp mayonnaise
- 4 slices bread
Method
- Rinse the chickpeas.
- Cut the red onion and the spring onion and add to a bowl together with the chickpeas, mayo and the lemon juice. Mash with a fork and keep some of the texture. Add salt and pepper to taste.
- Toast the bread and top with the chickpea salad. Enjoy!
