Chicken Breast with Lemon and Mashed Potatoes

ingredients

  • 2 x potatoes
  • 1 clove garlic
  • 1/2 x red onion
  • 1 tbsp butter
  • 150 g chicken breast
  • 1/2 x lemon
  • 1/4 dl crème fraîche
  • 1/4 pack rocket

method

  1. Boil potatoes until tender.
  2. Slice the red onion and fry in a pan along with the whole clove of garlic and some butter. Fry until the onion is soft. Add the chicken fillet and season with salt, pepper and freshly squeezed lemon juice.
  3. Pour out the water from the potatoes and mash with creme fraiche, salt and pepper.
  4. Serve the chicken breast with mashed potatoes, onions and rocket.
