Broccoli Soup with Bacon

Broccoli Soup with Bacon

ingredients

  • 1 clove garlic
  • 1/2 x yellow onion
  • 1/2 x broccoli
  • 5 dl water
  • 1 x beef bouillon
  • 125 g diced bacon
  • 1/2 dl cream

method

  1. Dice the garlic, onion and broccoli.
  2. Fry the onion and garlic in a saucepan with a little oil or butter until the onion is soft. Add the broccoli bouquets and cook for a few more minutes.
  3. Pour in water and bouillon, and let the soup cook for about 15 minutes - until the broccoli is tender.
  4. In the meantime, you can fry the diced bacon in a frying pan.
  5. Add cream to the soup and blend with an immersion blender until smooth. Season with a little salt and pepper if needed.
  6. Serve broccoli soup with bacon, and preferably some slices of bread.
  7. Note! If you follow the weekly menu, set aside 1 dl of the broccoli soup per person. It'll be used in the next dinner.
