Broccoli Gratin with Parmesan and Bacon

ingredients

  • 100 g diced bacon
  • 4 x potatoes
  • 1/4 x broccoli
  • 1/2 x red onion
  • 100 g parmesan
  • 1/4 pack parsley

method

  1. In this recipe we're using the broccoli soup made earlier in the weekly menu.
  2. Dice bacon and fry in a pan.
  3. Dice potatoes, broccoli and red onion. Add to a saucepan with water and carefully boil until the potatoes are almost completely cooked.
  4. Pour the water off of the vegetables and pour in the leftover broccoli soup. Stir and transfer to an ovenproof dish. Top with grated parmesan and bake at 200 degrees celsius for about 30 minutes.
  5. Top with finely chopped parsley.
