Beef Salad with Noodles and Cashew Nut Dressing


  • 45 g rice noodles
  • 1 clove garlic
  • 1 tbsp ginger
  • 1/4 x red chili
  • 1 tbsp fresh coriander
  • 50 g cashews
  • 1 tbsp soy sauce
  • 1/2 x lime
  • 1 dl coconut milk
  • 75 g beef strips
  • 1 x carrots
  • 1 x spring onion
  • 2 x radishes


  1. Boil rice noodles according to the instructions on the package. Drain and rinse them in cold water until cool.
  2. Mince the garlic, ginger, chili and coriander, and add to a blender along with cashews, soy sauce, lime juice and coconut milk. Mix until all the ingredients are pureed. Sample it and add more lime juice for acidity, more soy sauce for saltiness and more chili for spice.
  3. Fry the beef in a pan until the meat is properly cooked.
  4. Cut carrots, spring onions and radishes into thin strips.
  5. Combine the rice noodles, cooked beef, chopped vegetables and cashew nut dressing in a large bowl. Top with more coriander, a slice of lime and more cashews, if you have any.
