Baked Potato Bites with Crispy Prosciutto

ingredients

  • 3 x potatoes
  • 35 g prosciutto
  • 1/2 x red onion
  • 1/2 dl crème fraîche
  • 50 g cheese

method

  1. Boil the potatoes in salted water for 10 minutes (they are not supposed to be fully cooked through). Poke some holes in the potatoes using a fork. Then cover the potatoes in melted butter or olive oil and bake in the middle of the oven at 200 degrees celcius for 20 minutes.
  2. Bake the prosciutto in the oven together with the potatoes for the last 12 minutes or until crispy.
  3. Cut red onion into cubes.
  4. Cut the baked potatoes into half and top with creme fraiche, red onion, crispy prosciutto and grated cheese.
