Artichoke Toast with Watermelon Salad


  • 2 tbsp extra virgin olive oil
  • 1 tsp butter
  • 1 pinch sea salt flakes
  • 1 pack pickled artichoke
  • 1/2 x lemon
  • 100 g watermelon
  • 1 x tomato


  1. Melt butter and oil to a frying pan, add flaxseed salt and add the bread slices. When golden brown and crispy on one side, turn them over.
  2. Top the toast with pickled artichoke and a squeeze of lemon juice. Season with pepper.
  3. Dice watermelon and tomato into a salad and serve.
